CHIMICHURRI STEAK TACOS
Seared steak, chimichurri, avocado, yellow rice on the side.

Chimichurri needs overnight to meld. Steak needs to absorb seasoning.
Steps
1Make chimichurri sauce
1 cup fresh flat-leaf parsley (packed, finely chopped) + 4 cloves garlic (minced) + 2 tbsp fresh oregano (or 1 tsp dried) + 1/3 cup olive oil + 2 tbsp red wine vinegar + 1/2 tsp red pepper flakes + Morton's salt + black pepper. Mix in bowl, cover, refrigerate overnight. Flavors meld beautifully.
2Season steak
1 lb NY strip or flank steak. Season with Morton's salt, black pepper, garlic powder. Wrap in plastic wrap, refrigerate overnight.

Seared steak sliced thin, loaded into warm corn tortillas with chimichurri, sour cream, cheese, and avocado. Yellow rice on the side.
Components
Seared steak— 1 lb NY strip or flank
Chimichurri sauce— made night before
Sour cream
Shredded cheese— Mexican blend or cheddar
Avocado— 1 whole, sliced
Corn tortillas— 8–10 small (street taco size)
Yellow rice— 1.5 cups on the side
Cooking Steps
1Start yellow rice
Same method as Day 1 — 1.5 cups rice + 3 cups water + 1 tbsp olive oil + garlic + 1 packet sazón (or 1/2 tsp turmeric + pinch cumin) + Morton's salt. Cover, low heat, 18–20 min.
2Sear steak
Non-stick pan, high heat, 1 tbsp olive oil. Pat steak completely dry with paper towels. Sear 4–5 min per side for medium (adjust for thickness). Rest 5–8 min on cutting board. Slice AGAINST the grain into thin strips.
3Warm tortillas
Same pan (don't wash — steak fond), no oil needed. 20–30 sec per side until pliable and slightly charred spots appear. Stack and wrap in clean towel to keep warm.
4Prep toppings
Slice avocado. Get sour cream and shredded cheese ready. Pull chimichurri from fridge.
5Build tacos
Double-stack tortillas (2 per taco for strength). Layer: steak strips, generous chimichurri, sour cream dollop, shredded cheese, avocado slices.
6Plate
Tacos on one side. Yellow rice on the other. Extra chimichurri in a small bowl for dipping. Lime wedges.
💡 Don't skip resting the steak. Cutting too early = all the juice on your board instead of in your taco.
