Rub the brisket and make the BBQ sauce tonight. Tomorrow it just goes in the oven.
Steps
1Make dry rub
Mix: 2 tbsp brown sugar + 1 tbsp garlic powder + 1 tbsp onion powder + 1 tsp cumin + 1 tsp cayenne + 1 tsp black pepper + 1 tbsp Morton's iodized salt. Mix well.
2Rub the brisket
3–4 lb brisket flat cut. Rub ALL over the meat, pressing into the surface. Wrap tightly in plastic wrap. Refrigerate overnight.
3Make BBQ sauce
Small pot: 1 cup ketchup + 2 tbsp brown sugar + 1 tbsp apple cider vinegar + 1 tbsp Worcestershire sauce + 1 tsp garlic powder + 1 tsp onion powder + 1/2 tsp mustard powder + pinch cayenne + Morton's salt. Simmer 10 min on low, stirring. Cool, store in jar in fridge.

Slow-Roasted Brisket · Full Southern Spread
Dry-rubbed brisket, slow-roasted for hours, glazed with homemade BBQ sauce. Mashed potatoes, mac & cheese, baked beans, steamed broccoli. The whole plate.
Components
Dry-rubbed BBQ brisket— 3–4 lb flat cut
Homemade BBQ sauce— made night before
Mashed potatoes— 4 medium russets
Steamed broccoli— 2 cups florets
Baked beans— 1 can (28 oz) Bush's Original
Stovetop mac & cheese— 8 oz elbow macaroni
Cooking Steps
1Start brisket (9:00 AM)
Preheat oven to 275°F. Place rubbed brisket fat-side up in an oven-safe pot or dutch oven. Add 1/2 cup beef broth to the bottom. Cover tightly with lid or foil. Into the oven for 3 hours.
2Glaze brisket (12:00–12:30 PM)
Remove from oven. Brush BBQ sauce generously all over the top and sides. Return to oven UNCOVERED at 300°F for 30–45 min until sauce caramelizes and bark forms.
3Make mashed potatoes (1:00 PM)
Peel and cube 4 medium russet potatoes. Boil in salted water 15–18 min until fork-tender. Drain (tip water out carefully). Mash in the pot with 3 tbsp butter, 1/4 cup milk or cream, Morton's salt, black pepper. Mash until smooth and creamy. Keep covered on low.
4Make baked beans (1:15 PM)
1 can (28 oz) Bush's Original baked beans in a pot. Add 1 tbsp brown sugar, 1 tsp mustard, splash of Worcestershire, pinch cayenne. Simmer on low 15 min, stirring occasionally.
5Steam broccoli (1:20 PM)
2 cups florets in pot with 1/2 inch water. Cover, medium heat, 4–5 min until bright green and tender. Drain. Toss with 1 tbsp butter, salt, garlic powder.
6Make stovetop mac & cheese (1:30 PM)
Boil 8 oz elbow macaroni in salted water until al dente (~7 min). Drain. Return to pot on low heat. Add 2 tbsp butter, stir until melted. Add 1 cup whole milk gradually, stirring. Add 2 cups shredded sharp cheddar + 1/2 cup shredded mozzarella, stirring until melted and creamy. Season with salt, pepper, pinch garlic powder.
7Rest & slice brisket
Remove from oven. Rest 10–15 min. Slice AGAINST the grain, 1/4 inch thick.
8Plate
Sliced brisket with extra BBQ sauce drizzled. Mashed potatoes. Broccoli. Baked beans. Mac & cheese. The full Southern spread.
💡 Slice against the grain or it'll be chewy. Look for the lines in the meat and cut perpendicular to them.
